This breakfast is extremely popular and I know you must have seen this a thousand times before but I just can’t get over how daaaaaamn good it tastes okay?!
So over here on my recipe section of my blog, I thought I would tell you how I make the classic poached eggs with avo’ breakfast… or lunch or dinner… or ALL THREE.
What You Need
- 2 large fresh eggs
- 1 avocado (ready to eat)
- Sour dough bread
- Chilli flakes
- Balsamic glaze
What do you do?
Right, I always start by preparing the avocado. Cut the avocado and mash it in a plate. Add a pinch of salt and a t-spoon of chilli flakes. If you’re unsure how to handle the avocado just follow this video from YouTube.
I then slice two slices of my bread and put them into the toaster. Mean while bring water to a simmer in a pan and begin to prepare the eggs.
How to make the best poached eggs? There is no need to stir the water, all you need are fresh eggs. I find the poach better being at room temperature. Crack the egg gently and use your hands to slowly separate the egg shells to allow the egg to fall slowly into the simmering water. Leave to poach for 3-4 mins. After that everything should be ready and you can present as you please and add the balsamic glaze on top. You can see by the photos my preferred way to present mine.
